Christmas Day left-overs

Our fridge is threatening to explode!!!!

This recipe is a great Boxing Day entertainer, and such a good option for Christmas Day or any dinner party with roast meat leftovers. It's a nice fresh alternative to all the heavy food consumed from the big day. Just make in smaller quantity for less people....

THAI PORK SALAD

2 stalks of lemon grass
1tbs peanut oil
1 long red chilli, chopped
2 cloves of garlic, crushed
3cm piece of ginger, grated
up to 500g of cooked pork leftovers diced small (Could also use chicken?)
2 tbs fish sauce
1/4 c lime juice
2 tbs palm sugar
2tbs thai basil or regular
2 tbs coriander leaves
2 green spring onion stalks, sliced fine
1 cos or wiltlof lettuce laves separated into single cups

(this makes about 30 lettuce cups)
